Gnocchi Pomodoro

Gnocchi are a type of Italian dumpling / noodle that can be made from potatoes, wheat, corn, etc. They go well with vegetables, tomato or cheese sauces, and are especially good fried in a pan. This recipe is a simple tomato-based sauce for gnocchi with vegetables and a mixed green salad with olives, sun-dried tomatoes, and feta.
Ingredients
- Gnocchi di patate
- Tomato sauce (pick any you like, the simpler the better)
- Onion
- Red bell pepper
- Carrot
- Leek
- Garlic
And for the salad:
- Mixed lettuce
- Fresh green olives
- Sun-dried tomatoes
- Feta (or another crumbly cheese)
- Olive oil
- Balsamic vinegar
Instructions
- Add a pinch of salt to a pot of water and bring to a boil.
- While the water is heating, drop in the sun-dried tomatoes and then prepare vegetables by chopping onion, garlic, bell pepper, carrot, and leeks into small bits.
- Heat a large pan (I use a wok) and stir-fry the vegetables in some olive oil for a few minutes to soften the bite of the onion and garlic.
- Add a little salt and stir in the tomato sauce, letting it slowly heat.
- Take the now-soft sun-dried tomatoes out of the pot and drop the gnocchi into the boiling water.
- Let boil for several minutes, until they all float.
- While waiting for the gnocchi prepare the salad by placing the whole olives, sun-dried tomatoes cut into strips, and crumbled feta on top of the lettuce.
- Add olive oil and balsamic vinegar with a dash of pepper to taste.
- When the gnocchi are done, drain water and add them to the sauce, then stir and serve.
